Nutella Brownie Trifle
In case I have never mentioned, I absolutely love Chocolate and Dark Chocolate is EVEN better! Anytime I go somewhere, they offer something Chocolate, it never has enough chocolate in it...ever! Plus, I'm having my family over for dinner in a couple of weeks, so I thought I would make a quick, make ahead dessert that would satisfy the chocolate lovers of my family! My one sister in law, informed me recently she hates all my Gluten Free treats, and if she had to go GF she would just starve...I know she won't read this, so I hope it never happens. I'm pretty sure she hasn't tried 99% of my desserts, the rest of the family, friends and neighbors really like them, she just doesn't want to give them a chance.
These look pretty and taste great too, so if you want to make something that looks great and is easy to make, this is a HIT!

Ingredients:
Adapted slightly from, On Sugar Mountain
-1 cup Pamela's Bread Flour
-3/4 cocoa powder(I use dark /regular mix)
-1/2 tsp baking powder
-2 cups sugar
-1 cup butter (melted)
-2 tsp Pure Vanilla extract
-4 large eggs
-1cup Nutella (heated in the microwave 45 seconds)
-1/2 cup semi-sweet chocolate chips
-1 (1oz) Sugar free Chocolate instant pudding (or any flavor you want)
-Whipping cream or the whipped cream in a can if you prefer. (this is supposed to be easy)
-In a microwave safe bowl melt the butter(not scorching,just melted)
then add the sugar and whisk, cool for a minute, move onto the flour
mixture.
-In another bowl (mixer) add
flour, cocoa and baking powder and mix together for 30 seconds or so.
Now leave it, go back to the butter.
-Now add the eggs, 1 at a time to the butter and sugar and whisk them in completely, then add vanilla.
-Next,On
low, add the butter mix to the flour and mix, combine it, then add the
Nutella, mix it again and scrape the sides....until combined then gently
add the chocolate chips. Now pour it into the pan and smooth.
To Bake:
Preheat the oven to 350 degrees, line a 8x8 square
pan with parchment paper( I sprayed the bottom to make it stay down)
Bake for 55-57 minutes, it will still be jiggly, but it is done. Cool
completely before you take it out of the pan, or it will fall apart. I
was impatient, and mine did fall apart. I put mine in the fridge over
night then cut it apart in the morning.
-I made my brownies, then threw them in the freezer, about a half hour after they were out, to rush the process, also it makes them easy to cut!
To assemble:
-Now onto the Pudding, make it while the brownies are cooling.
-Then make your whipped cream or don't and use the Real Whip Cream in a can, I love it, I use it sometimes too!
-Now that the Brownies are cool, cut them into bite size pieces, layer it on the bottom of whatever container you wish.
-Next Whipped Cream, then pudding and a few more Brownie chunks.
-Lastly Whipped Cream and chunk of Brownie, put in the fridge and serve when ready! This is for Chocolate Lovers!
One of my favorite things is- The Real Whipped Cream in a can; it really does have it's uses, especially if you are in a hurry!

Peach Trifle
Peaches are one of the greatest fruits on this Earth, I absolutely love everything about peaches and if you follow my blog, this isn't the first peach dessert; but I think it might be the BEST, (I could have licked the bowl clean) I've blogged this summer; it took major self control to not make more!! My bowl is not pretty to hold the trifle, so now I am on a search to find a beautiful, glass trifle bowl, who would have thought anyone would ever need such a bowl(not me!!) but honestly, everything tastes so much better if it in is a GORGEOUS container!!
Presentation, presentation, presentation, that is the name of the game when you are taking Gluten Free food anywhere, it must look equally as appealing as the "regular food" if not better, or no one will even try it. So, my suggestion for the day is, anywhere you go, yard sales, flea markets, auctions, hand-me-downs, thrift shops, new stores, wherever you go, always look for bowls, platters, plates, cake stands and anything else you can find to display your fantastic food on! Ingredients:
Recipe adapted from Shiksa in the Kitchen
-1 box GF yellow cake mix of your choice
-1 (8oz)cream cheese room temp
-1 pint whipping cream (1.6fluid oz.)
-1 (3.9 oz) vanilla pudding (GF)I also use sugar free so I have use 2 small boxes, I don't need anymore sugar!
-2 tsp pure vanilla extract
-1 1/2 cups powdered sugar ( you will use 1/2 cup with the cream cheese and the 1 cup with the whipped cream)
-5 cups fresh peaches
**Let it chill in the fridge for at least 4 hrs, once assembled.**
To assemble-
-make your cake, let it cool, then cut it into chunks.
*When your cake is cooking and cooling, do the below things*
-In a mixer or with a hand-mixer, mix the cream cheese, vanilla, dash of salt, 1/2 cup of powdered sugar together until it is light and fluffy.
-Mix together your pudding, then set in the fridge
-Whip up your whipping cream, add 1 tsp vanilla, and 1 cup powdered sugar, whip until thick .
- Peal and cut up your peaches
1-First layer cake
2-Peaches
3-Cream cheese
4-Pudding
5-repeat until you run out of everything
6-Lastly- add your whipped cream very last on the top, and decorate with a few peaches if you choose.
This actually made this bowl and a small bowl too, it will make a big trifle bowl and serve a lot of people. You can make it a day ahead it you like, and just put cool whip on instead of whipping your own cream if your in a hurry. * Make sure and chill in the fridge for at least 4 hours once it is assembled, it helps the flavors to melt together!* Seriously, this is so fantastic, I could have taken a spoon to the bowl and just eaten until it was gone!

Red Velvet Trifle
I was struggling with what to say today, so I put the whole recipe on before I even started this. I have been to several family gatherings lately, which don't get me wrong, I love being with mine and my husbands family; but, it sure is tough when everything revolves around food. I hate to whine, but dang I would like to have more then fruit, meat and an occasional salad to eat at these fun gatherings, and I don't always want to pack myself a whole meal, and explain to everyone who DOESN'T know what having to be Gluten Free is. I just want to walk into a Restaurant, Party, Convenience Store, Neighbors house or go on a vacation and not worry about having to pack my whole stinking house. I want to be able to travel and have everyone know exactly what GF is, and how to assist us. I'm done whining, I am fixing my issue with NASTY GF Desserts, now I have to figure out a way to make the traveling easier for us too. So sorry about the rant, I hope I'm not the only person who ever has these issues. Enjoy the Trifle it's Delicious, Natalie
Ingredients:
Recipe slightly adapted from Fat Girl Trapped in a Skinny Body
-Gluten free Red Velvet Cake mix (Gluten- Free Heaven carries this, she is on the web or call 801-717-8423) They are Fantastic!
- Or you can use another cake mix of your choice and use your food coloring to make it
Red Velvet. You need a 9x13 inch cake or 2 9x9 inch round cakes to make this. Or, if you feel Super ambitious, make your own!!
Ganache-
-1 cup half and half (or I used whipping cream, that is what I had on hand)
-2 cups semi-sweet chocolate chips
I have done this in the microwave and on the stove and they both turn out just beautifully! If you do it on the stove, put the chocolate and the cream together, turn it on medium heat, let the chocolate start to melt and stir it all together until it is all smooth and creamy. It takes about 7-8 minutes, when it is cooled to room temperature then it is ready to be drizzled on the cake. (if you are in a rush, put it in the fridge for a few minutes)
Creamy Goodness:
-12 oz. Cream Cheese ( room temperature)
- 1 12 oz. container of Cool Whip
-1/3 cup sugar
Mix the sugar and the cream cheese together, with a hand mixer or big mixer until they are smooth and creamy. When you have mixed it well, then add the Cool Whip, and blend it in slowly until it is all fluffly!!!
-Now that everything is made we are ready to ASSEMBLE! You can do this how ever you like, I had my 16 year old daughter help me, so I let her do the cake part however she wanted to, hence the CRUMBLED cake, ( I was thinking chunks) she thought it would look really cool crumbled, so we got a "Cool Crumbled Trifle". It all tastes the same so chop it up in chunks or crumbles, it doesn't matter, I just wanted her to help. ( if you have teenagers, you understand this!)

Assembly-
-Cake
-Creamy Goodness
-Ganache
Do this in thirds, when you put on the creamy goodness smooth it over the whole thing, then drizzle the Ganache. On the very last layer end with Creamy goodness, and sprinkle with Cocoa just to finish it off.
It's not my most beautiful dessert,
but it tastes really great!
