Coke Cake
Summertime is my favorite time of the year, it's warm, sunny, family gatherings, swimming, Strawberry Days and especially NO SCHOOL!!!!! So I survived Girls Camp, it's just taken me a couple of weeks to get my groove back, and bake again. I had a really GREAT time, but oh my gosh, that was serious work, cooking for 70 plus Gluten full people for 4 1/2 days, the last morning I cheated and ordered Doughnuts!! The minute I walked in the house I was craving chocolate, so I looked to an old stand by, Pepsi Cake, but I sent my husband to buy Pepsi and he came back with Coke! Oh well, it tasted GREAT, and filled my chocolate void, and it was easy!!!

These are just a few of the people I love, and get to spend my summer with!
My nephew Stockton, my mom, my daughter, son, 3 nephews, niece, and below sister, brother in law. There are many more, and we have great times together.
Ingredients:
-Chocolate cake mix( I used Gluten Free Heaven, you can order it online at www.GlutenFreeHeavean.com)
-1 cup melted butter
-4 large eggs
-1 1/2 tsp vanilla
-1/2 boiling water
-1 cup coke (1 can)
-1 cup mini marshmallows
Preheat your oven to 325 degrees, and spray a 9x13 inch pan with Pam. Bake for 43-47 min, or until a toothpick comes out with only a spec of cake on the very bottom.
(on the cake, i'm sure you could use a Betty Crocker Cake mix too, I just like this mix better. It's more moist and fills the whole 9x13 in cake pan)
Combine the cake mix with the boiling water, let it stand for 15 minutes, then add the butter, eggs and vanilla. beat until they mixed well, scraped the sides. Lastly add the Coke, mix until the liquid is all combined, don't over mix you want the fizz, then add the marshmallows. Pour into the pan.
As you can tell the texture is Fantastic!!!
This cake is moist and rich, I probably went a little skimpy on the frosting for such a tall cake. I think it definitely needed much thicker frosting !
Frosting:
-1 cube softened butter
-5 TB cocoa( I used half dark/half regular)
-1 tsp Pure vanilla extract
-dash salt
-Coke a Cola (as needed)
-powdered sugar (4-5 cups)
Beat the butter and cocoa together until they are nice and fluffy, then add the salt and vanilla. Make sure and scrape the sides down, and the bottom. Next add some Coke and powdered sugar, add powdered sugar and Coke until you like the flavor and consistency of the frosting. I like mine a little thick and sweet. Don't frost the cake until it is COMPLETELY cool, otherwise it will just melt off. Also, I like to keep my cake in the Fridge, it just tastes better!
No one will ever know this is Gluten Free!

Red Velvet Trifle
I was struggling with what to say today, so I put the whole recipe on before I even started this. I have been to several family gatherings lately, which don't get me wrong, I love being with mine and my husbands family; but, it sure is tough when everything revolves around food. I hate to whine, but dang I would like to have more then fruit, meat and an occasional salad to eat at these fun gatherings, and I don't always want to pack myself a whole meal, and explain to everyone who DOESN'T know what having to be Gluten Free is. I just want to walk into a Restaurant, Party, Convenience Store, Neighbors house or go on a vacation and not worry about having to pack my whole stinking house. I want to be able to travel and have everyone know exactly what GF is, and how to assist us. I'm done whining, I am fixing my issue with NASTY GF Desserts, now I have to figure out a way to make the traveling easier for us too. So sorry about the rant, I hope I'm not the only person who ever has these issues. Enjoy the Trifle it's Delicious, Natalie
Ingredients:
Recipe slightly adapted from Fat Girl Trapped in a Skinny Body
-Gluten free Red Velvet Cake mix (Gluten- Free Heaven carries this, she is on the web or call 801-717-8423) They are Fantastic!
- Or you can use another cake mix of your choice and use your food coloring to make it
Red Velvet. You need a 9x13 inch cake or 2 9x9 inch round cakes to make this. Or, if you feel Super ambitious, make your own!!
Ganache-
-1 cup half and half (or I used whipping cream, that is what I had on hand)
-2 cups semi-sweet chocolate chips
I have done this in the microwave and on the stove and they both turn out just beautifully! If you do it on the stove, put the chocolate and the cream together, turn it on medium heat, let the chocolate start to melt and stir it all together until it is all smooth and creamy. It takes about 7-8 minutes, when it is cooled to room temperature then it is ready to be drizzled on the cake. (if you are in a rush, put it in the fridge for a few minutes)
Creamy Goodness:
-12 oz. Cream Cheese ( room temperature)
- 1 12 oz. container of Cool Whip
-1/3 cup sugar
Mix the sugar and the cream cheese together, with a hand mixer or big mixer until they are smooth and creamy. When you have mixed it well, then add the Cool Whip, and blend it in slowly until it is all fluffly!!!
-Now that everything is made we are ready to ASSEMBLE! You can do this how ever you like, I had my 16 year old daughter help me, so I let her do the cake part however she wanted to, hence the CRUMBLED cake, ( I was thinking chunks) she thought it would look really cool crumbled, so we got a "Cool Crumbled Trifle". It all tastes the same so chop it up in chunks or crumbles, it doesn't matter, I just wanted her to help. ( if you have teenagers, you understand this!)

Assembly-
-Cake
-Creamy Goodness
-Ganache
Do this in thirds, when you put on the creamy goodness smooth it over the whole thing, then drizzle the Ganache. On the very last layer end with Creamy goodness, and sprinkle with Cocoa just to finish it off.
It's not my most beautiful dessert,
but it tastes really great!

Strawberry Delight
In case I haven't mentioned it, I love anything with Strawberries or Peaches in it(as long as it's not cooked). So a couple of weeks ago, I saw the Strawberries in the store again and decided it was time to make something new, and SUPER FATTENING with said Strawberries, this tasty treat is what I came up with. We have all the elements to make greatness, Strawberries, cake, cream cheese, and whipped cream; seriously, what more can you ask for in one dessert? Maybe Chocolate, but you can add that yourself if you would like. I think this dessert turned out great, it was quick and easy, plus, it looks FANCY, so people will be looking at how nice it looks and not wondering if it is Gluten Free! Ingredients:
-2 gluten free Betty Crocker cake mixes (yellow) or I used 1 from Gluten Free Heaven (it makes 2 round pans)
-This is for each cake-
- 2/3 cup Buttermilk
-1 cube butter slightly melted
-2 tsp vanilla
-3 large eggs
Bake as the instructions say, I have found about 30 minutes bake time. 2- 9x9 inch pans, sprayed with Pam. Make sure and cool them completely.
Cream Filling:
-1 container of Strawberries
-1 16 oz container of Cool Whip
(or make your own and use heavy whipping cream, and sweeten it to your taste)
-8oz package of cream cheese at room temperature
-1/3-1/2 cup of powdered sugar- mix the powdered sugar and the cream cheese together with a hand mixer or stand mixer, mix until they are nice and fluffy and you like the sweetness. Then add in the Cool Whip or whipped cream, and mix it together until fluffy, but don't over do it.
Putting it together:
-Slice up your Strawberries
-Spread half of the Cream Filling on the bottom cake, make it THICK
-Then add a layer of Strawberries
-Cake again
-Cream Filling
- Strawberries to finish off and make it look pretty.
When you are all done putting it together, let it rest in the fridge for 2 hrs so everything can set, and chill. The cake tastes much better when it's cold, and stays together better.
This was my treat to my family for Easter, and it didn't last long. :)
Here is my little family, they hate when I put photos of them on, but oh well! These are just a couple of my tasters , they have helped make going Gluten Free much easier! Love you, Mom

Better Then Sex Cake
Ok, so people may have a fit, but this is all I have ever called this cake.(but call it whatever you want) My husband and daughter love this, I think my daughter loves it because it reminds her of Tres Leches. But honestly, what isn't there to love, chocolate, Cool Whip, Heath Bars and Caramel all of the components to make any sweet lover HAPPY!!! I feel a little sad for my family, they rarely get to have anything twice, I am always trying out the new recipes on them, and sometimes they don't turn out super, the first few times, practice makes perfect right?!
I have been informed, by some of my friends and neighbors that I need to make a few more EASY recipes, for the non-bakers of the world. I hope this fills the need. Also, I have a friend who has developed her own cake mixes, flours and a variety of other things. Ingredients:
-Gluten Free Heaven Chocolate Cake Mix(you can use whatever cake mix you have)
-14 oz. can sweetened condensed milk( I used fat free)
- Mrs. Richardson's Butterscotch Caramel
-2 Heath bars
-Cool Whip regular sized tub
This is a 9x13 cake recipe, so bake your cake according to the box instructions, then make sure and let it cool COMPLETELY( I did not and the Cool Whip started to melt, YIKES!!!)
-Next poke holes in your cake with either a plastic handled spoon or chop sticks, if you want it more consistently through out.
-Then pour on the Sweetened Condensed Milk, and let it absorb for a few minutes, I spread it a little bit.
-Then pour on your caramel, I did not use every drop, about 3/4 and spread it also. The 1/4 I did not use, I use to top with, because my husband likes it on top, hence the pictures.
-Lastly, spread the Cool Whip evenly across the cake.
-Garnish with Heath bar, which I put in the fridge, and then beat with a mallet, to break it up.
This has got to be one of the easiest cakes, ever, it was so easy my daughter even volunteered to help! Holy miracle of miracles
