Zucchini Bars
I'm just going to put this out there now, these pictures look like crap, It was dark outside and were having a muggy day, and I had to take these bars to a party, not my finest work!! This Summer has pretty much been like that, rush, rush, rush....they say when you have little kids you have no time, but; man having teenagers are a lot more work then the little ones, at least with the little ones the want to go to the pool!! Those rotten teens just want to sit and rot on the XBOX all day.
I have baked a ton, but nothing has made it on here because, my house has looked like a scene out of CSI, heavy duty plastic on the floor, walls and ceilings, and furniture shoved everywhere....with a healthy dose of saw dust 3 inches thick all over the house! Like anyone wants that in there food?! YIKES!!! Construction that took 2 months to finish, is always a pleasure, especially when it involves your kitchen! NOT!
So with the abundance of Zucchini around I thought, let's make something delicious I can put cream cheese frosting on, OH YA!! These bars are quick and fantastic if I do say so myself! (oh the other gluten eaters loved them too!) Give them a try and see if you like them too!

Ingredients-
-2 cups sugar
-1/2 cup oil
-1 cup buttermilk
-3 cups grated Zucchini
-1/4 tsp salt
-1 tsp pure vanilla
-2 tsp baking soda
-1 tsp baking powder
-4 large eggs
-3 1/2 cups Pamela's Bread flour mix
How to-
-First mix the sugar,oil and buttermilk together, then add the Zucchini and mix well.
-Next add the salt, vanilla, baking soda and baking powder and mix well.
-Then add your 4 large eggs one at a time until they are mixed in, and then add the flour a cup at a time and mix well.
-Use a 17x13 inch Jelly Roll pan, spray it with Pam. Preheat the oven at 350 degrees and bake for 35 minutes or until a toothpick comes out clean. Cool on a wire rack, then frost with with Cream cheese frosting.
Cream Cheese Frosting:
- 1 package room temperature cream cheese
- 1 cube butter(softened)
- 1 tsp real vanilla
- 4 1/2 - 5 cups powdered sugar( depending on how sweet you like it)
-1 dash salt
- milk as needed
Beat together the cream cheese and butter
until creamy, then add vanilla, and salt. Next add powdered sugar and
mix together, add milk if it gets too thick. Beat well. I make this recipe, it
makes a lot, if I don't use it all I put it in a sealed container in the
freezer and get it out for the next time I need to frost something, it
works great when your in a hurry.

Zucchini Bread
Finally, that is all I have to say; I finally figured out a Zucchini Bread that I LOVE!!!! I am so happy, that I almost ate the entire two loaves of bread all by myself, but; I shared because my son will actually eat this and (there is a vegetable inside, so I'm not saying NO) I can always make more!!! I love to eat this bread, it gives me a reason to use butter again....I miss it! So I put it in the fridge and let it get all cold, then cut it and eat it all day long for every meal with butter on it!!! So bad I know, but seriously, how often do we get good bread to actually use butter on? Uh, NEVER! Unless by some miracle you all know something that I don't, in the chance that you do, please make sure and give me the heads up of where to get this amazing bread, so I have somewhere else to use my butter! The sad things you crave, I know, soooo pathetic! So try the Zucchini Bread my way ,and see if you love it too?! Happy Baking, Natalie
INGREDIENTS:
-1/2 tsp salt
-1/2 tsp cinnamon
-2 tsp baking soda
-1/2 tsp baking powder
-3 cups Pamela's Bread flour
-2 tsp pure Vanilla extract
-3/4 oil
-2 cups grated Zucchini
-1 cup granulated sugar
-3/4 packed brown sugar
-3 large eggs
Mix together the salt, cinnamon,soda, flour and baking powder in your mixer or with a hand mixer.
Next -add the oil,eggs and vanilla, mix together, scrape the sides, then add the Zucchini, brown sugar and sugar ,mix well, when it is all combined then scrape the bowl and pour it into the pans, TRY AND MAKE IT EQUAL.
This bread freezes so GREAT, so make some now while we are in Zucchini season; don't let your fresh veggies go to waste!
Preheat your oven to 350 degrees. Bake for 55-60 minutes or until the toothpick comes out clean. I used 2 -8x4x3(or somewhere really close to it) inch pans, I sprayed them with cooking spray, then I sprinkled sugar on the inside so they wouldn't stick.( my husband said that made it taste even better)

Chocolate Zucchini Cake
As
you probably know it is Zucchini season again, and I never want to let
any of the fresh Zucchini to go to waste. So my friend Niccole, who is
also GF had this WONDERFUL recipe that
she loved to make when she wasn't GF and really wanted to enjoy this
cake again. So I put forth my best effort to convert this recipe for
her and EVERYONE else, it is so DELICIOUS, and what a good way to get a
vegetable into a treat and not have your children know! There
is no way your kids will even think about a vegetable being in this
dessert, all they will see is chocolate goodness. Thanks again Niccole,
and thanks for tasting all of my desserts; even the not so good ones

Ingredients-
-1 cup brown sugar
-1 cup granulated sugar
-1 TB pure vanilla extract
-1/2 tsp baking powder
-1 tsp salt
-2 tsp baking soda
- 1/3 cup cocoa( I use half dark/ half regular Hershey's unsweetened )
-3 large eggs
-1/2 cup butter milk
- 2 cups grated zucchini
-2 3/4 cups Pamela's bread flour
-1 cup semi-sweet chocolate chips Guittard (they are GF)
Preheat oven to 350 degrees, bake for 36-38 min or if poked with a toothpick in the center it comes out clean. Use a large sheet pan 1x13x18, spray it with Pam cooking spray. When the cake is poured in just smooth it to the sides with a spatula.
Mix all of the ingredients together in a mixer or large bowl,add the flour last, make sure and scrape the sides down. Once you have added the flour, mix all of the ingredients on low for 2 minutes; if you don't it will make your cake have AIR BUBBLES for some strange reason. Make sure and cool it completely before frosting. I frosted my first cake with chocolate and the second one with cream cheese, I had people who liked both; I happen to like the cream cheese because of the contrast with the chocolate. Chocolate Zucchini Surprise Cupcakes
When I was making a Chocolate Zucchini Cake recipe, my good friend Niccole gave me to convert to GF, after I had converted it, I loved it so much I wanted to make it into a cupcake recipe too; it is FANTASTIC! As we all know it is growing season and most people either have Zucchini coming out their ears, or family and friends who have that problem, and would love to drop some off at your house, so the question is what to do with it all. In my world why not make a TREAT with it, I guarantee there will be no complaining about having Zucchini tonight, and with the surprise of caramel in the middle, you can't lose. Ingredients:
-1 cup brown sugar
-1 cup granulated sugar
-1 cup vegetable oil
-1 TBS pure vanilla extract
-1/2 tsp baking powder
-1tsp salt
-1/3 cup Hershey's Cocoa (I use half dark/ half regular unsweetened)
-2 eggs
-1/2 cup buttermilk
-2tsp baking soda
-2 cups grated zucchini
-2 3/4 cups Pamela's Bread flour
-1 package of caramels
- cupcakes liners
Mix the sugars, oil, vanilla, baking powder, salt and cocoa together. Scrape the sides, then add eggs, buttermilk, soda, zucchini and scrape again, lastly add the flour. Mix for 2 min on low. Use a 1/4 cup measuring cup to fill the cupcake, insert the caramel in the middle, don't push all the way to the bottom, then cover with a spoonful of batter.
Preheat your oven to 350 degrees, bake for 30-33 min or until a toothpick comes out clean in the center, but don't push it down into the caramel. Should make 26 cupcakes.
