Gluten Free Red Velvet Cake Balls

Oh my gosh, what  can I say about Cake Balls, I LOVE  them!! Here are a couple of reasons why: they are pop-able, they freeze, so I can have treats for a month, they are portable, my 16 year old can and WILL make them!!! (she doesn't cook!) portion control, they look soooo FANCY when you take them to places.  You can dress up the outside and make it look festive for any Holiday.  I personally love having cake balls in my freezer, instant treat and chocolate to boot.  My favorite, and my families is still The Nutella Cake Balls, but these are a pretty Stinking good, they only lasted a week!  I really hope you like them, no one will EVER know they are GF, so don't tell until they are GONE!  Natalie



Ingredients:

 -1 Gluten Free Betty Crocker, Devils Food (chocolate) cake mix
-1cube melted butter (not bubbly,just barely)
-1 cup buttermilk
-3 large eggs
-red food coloring(I use food gels, they do richer better colors, I think, especially for frostings)
-1 cube of cream cheese
-1/4 powdered sugar
-white chocolate or semi-sweet chocolate, or whatever you want to dip with.  I used the Wilton white candy coating this time, just to see how it would work, I personally DID NOT like it, it was way too sweet.  I like regular chocolate, I won't be using it again. 
-Crisco, which you use a teaspoon at a time to thin down the chocolate.   



Cooking directions-
Use a 9x13 pan, sprayed with Pam, Bake for 25-27 min, check with a toothpick.  Cool the cake completely, then crumble the cake up.   Use a room temperature cream cheese brick ,and the powdered sugar  and combine them with a big spoon (I use my hands) and the cake crumbles, and combine them together until it all is all stuck together.  It's a little messy, but kinda fun!  Then roll those babies into balls, between 30-40. Place them on a sprayed pan, then into the freezer for at least 2 hrs or over night.(put the toothpicks in before you freeze them).  If you don't have time to dip them soon, put them in a freezer bag and do it at your leisure.
    Dipping, I just put the chocolate into a microwave safe bowl, heating 30 seconds at a time.  Thick chocolate is hard to dip, so I always end up using some Crisco, to thin it down.  My tip is to put toothpicks in the top of the cake balls, before you freeze them, then while they are frozen, use it to hold onto while you dip!

Gluten Free Peachy Cake Balls

      Peaches, what can I say about them; I think Peaches are one of the GREATEST fruits ever, so anytime I can put a Peach in a dessert I will, and cake balls and peaches together, there is NOTHING better!!!  Every time I go to a wedding, baby shower, or wedding shower they always have Fantastic looking desserts that I NEVER get to eat!!  I smile and nod and have a piece of fruit, and a vegetable with no dip, for fear it will make me sick, then when I go home I feel more bitter every time, and make a big batch of something I can eat, because I am so jealous of all the pretty desserts.  So enough whining, I make cake balls so when I need a pretty dessert, or my Gluten Free Friends need one, we can just pull a couple out of the freezer, and have OUR very own tasty and pretty treat, that others are jealous of!  So, if you need a pretty treat, make cake balls and eat them in front of your Gluten eating family, they will be jealous! Ingredients:

-1 box Betty Crocker GF yellow cake mix

-3 large eggs

-3/4 cup buttermilk

-1 stick of butter melted(not bubbling)

- 2 tsp pure vanilla extract

       Mix all of these ingredients together in a mixer or large bowl with a hand mixer, for 2 min.  Pour it into a 9x13 inch pan.

     Bake at 350 degrees for  25-27 min, don't overcook or it will be dry.  Use a 9x13 inch glass pan and spray it with Pam.   Once it is cooked, let it cool completely then crumble it up and set aside.  You can even put the crumbles in a Ziploc and freeze or wait until the next day.

      

      Add: 

- 1 brick of cream cheese, that has come up to room temperature

- 1/4- 1/3 cup powdered sugar (depending on how sweet you like it)

-1 cup fresh peaches (you can also use frozen) if you want less peaches you less, I love them, chop them into small chunks.

    

       Mix all of these ingredients together with a wooden spoon,or like I do, with fresh clean hands.  When it is all combined then roll them into nice even balls, and put them on a pan that has been sprayed with Pam, and then throw them in the Freezer and leave for 2 hours or over night.

   

      Finish: sometimes I am lazy and when the balls are frozen, and I don't have time to finish them that day, I just take them off the pan and put them in  a freezer bag for another day.  Don't buy candy coating, it cracks and it's the pitts!!! I always buy the big bricks of Chocolate white or dark, it melts so much better, and stays on the cake balls or anything.  So get your chocolate, put it in a microwave safe bowl and heat it up a minute at a time, and stir.  If it is too thick, add some Crisco, sounds nasty but makes it so much easier to dip!  I put tooth picks in the top of the frozen balls and then use that too dip it in the chocolate,  then when it hardens it pulls right out.  Once you do this it is so easy, if you want pops add sticks when you are rolling them.

   












 Cake Balls are Fantastic, and they store really well; that is if you can keep them around that  long.  My longest batch has lasted 2 months in the freezer and been great, tasting like they were made that day!  Let me know what you think.

Gluten Free Chocolate, Chocolate Chip Cake Balls

Chocolate, Chocolate Chip Cake Balls

  Well these cake balls are the result of the house construction, I really wanted a treat one night ;so I asked the kids what they would like and they said cake balls!  So, I thought about what sounded good to me, (chocolate of course) so I decided on Chocolate Chip, with a surprise hint of Almond.  I love to try new recipes, the only problem is, is that my kids want me to make recipes they have already decided they love; they are not very adventurous!!  My taste testing  group all really liked these, and I hope you will too.  Natalie

Ingredients-

  -1 Betty Crocker  Chocolate (GF) cake mix 

 -1 cup butter milk

 -1/2 cup of butter (1/2 cup) slightly melted

 -3 eggs

 -1/8 tsp almond extract

 -1tsp  pure vanilla extract

Combine all of the ingredients in a large bowl or mixer, put the eggs in last and make sure they are combined, scrape the sides and bottom.  Mix for 2 minutes at medium speed.

 

   Preheat oven to 350 degrees. Use a 9x13 pan, spray it with Pam cooking Spray.  Bake for 25-28 min.  Then let it cool completely.

 

 Ball ingredients-

   -1 8oz package of cream cheese( I use Philly) room temperature.

  -1/4 cup powdered sugar

  -1/2 cup mini chips

  -1 sprayed cookie sheet 

 

 After the cake has cooled completely, break it all into little pieces and put into a large bowl.  Then just sprinkle the powdered sugar over the top of the crumbles, add the chips and throw in the cream cheese and go to town with your hands.  It is a little messy, but it combines it all very well.      Next, roll them into 1 inch balls and put them onto the cookie sheet, and store for 1 hr or overnight.  They are easier to dip when they  are really cold.  Use toothpicks in the tops to dip, in the chocolate.  You can store them in a Ziploc freezer bag, and dip them days later.  Use whatever baking chocolate you choose or even chocolate chips...when melting the chocolate do it in a glass microwave safe bowl a minute at a time...if it is too thick add a little Crisco to thin it down.  One side note White Chocolate Chips do not melt well!!!   After I make cake balls, I put them in the freezer and they stay great for weeks, and are quick to un-thaw if I have guests over, or I need to take something somewhere I have a treat already made!!  

 

   My daughter helped me decorate, she doesn't like to make the balls, but eating and decorating, no problem!
