Coke Cake
Summertime is my favorite time of the year, it's warm, sunny, family gatherings, swimming, Strawberry Days and especially NO SCHOOL!!!!! So I survived Girls Camp, it's just taken me a couple of weeks to get my groove back, and bake again. I had a really GREAT time, but oh my gosh, that was serious work, cooking for 70 plus Gluten full people for 4 1/2 days, the last morning I cheated and ordered Doughnuts!! The minute I walked in the house I was craving chocolate, so I looked to an old stand by, Pepsi Cake, but I sent my husband to buy Pepsi and he came back with Coke! Oh well, it tasted GREAT, and filled my chocolate void, and it was easy!!!

My nephew Stockton, my mom, my daughter, son, 3 nephews, niece, and below sister, brother in law. There are many more, and we have great times together.
-Chocolate cake mix( I used Gluten Free Heaven, you can order it online at www.GlutenFreeHeavean.com)
-1 cup melted butter
-4 large eggs
-1 1/2 tsp vanilla
-1/2 boiling water
-1 cup coke (1 can)
-1 cup mini marshmallows
Preheat your oven to 325 degrees, and spray a 9x13 inch pan with Pam. Bake for 43-47 min, or until a toothpick comes out with only a spec of cake on the very bottom.
(on the cake, i'm sure you could use a Betty Crocker Cake mix too, I just like this mix better. It's more moist and fills the whole 9x13 in cake pan)
Combine the cake mix with the boiling water, let it stand for 15 minutes, then add the butter, eggs and vanilla. beat until they mixed well, scraped the sides. Lastly add the Coke, mix until the liquid is all combined, don't over mix you want the fizz, then add the marshmallows. Pour into the pan.
As you can tell the texture is Fantastic!!!
This cake is moist and rich, I probably went a little skimpy on the frosting for such a tall cake. I think it definitely needed much thicker frosting !
Frosting:
-1 cube softened butter
-5 TB cocoa( I used half dark/half regular)
-1 tsp Pure vanilla extract
-dash salt
-Coke a Cola (as needed)
-powdered sugar (4-5 cups)
Beat the butter and cocoa together until they are nice and fluffy, then add the salt and vanilla. Make sure and scrape the sides down, and the bottom. Next add some Coke and powdered sugar, add powdered sugar and Coke until you like the flavor and consistency of the frosting. I like mine a little thick and sweet. Don't frost the cake until it is COMPLETELY cool, otherwise it will just melt off. Also, I like to keep my cake in the Fridge, it just tastes better!
No one will ever know this is Gluten Free!

I just found a link to your blog on facebook. My son was diagnosed with Celiac Disease 7 years ago. Most of the family has adopted the diet as well. We just feel better and have more energy when we avoid gluten. I'm so happy to find your blog and this delicious Coke Cake. Thank you for taking the time to share your recipes. It means a lot.
Help what amount do you mean when you say 1 cube of butter? What measurement would that equal???? I so want to make some of your recipes but can't until I have idea what you mean by a cube?

I'm glad you like my Blog, I bake what I crave and miss the most, which are sweets and good bread( but good bread is NEVER going to happen!) My family also eats GF, but I'm the only one who actually HAS to eat that way (Celiacs almost 2 yrs ago). I'm sorry for the confusion on the butter measurements. 1 cube of butter is 1/2 cup, I will now go back and adjust that on all of my recipes. Thank you, for making me aware of this need. I hope this will make it so you are now able to understand my recipes. Happy Baking, Natalie

Should the consistency of the batter with the 1/2 cup of boiling water be thick and hard to stir? If so, I may have to start over. I could hardly mix the GF cake mix with that amount of water.
