Gluten Free Fabulous Oatmeal Chocolate Chip Cookies

I really love Chocolate Chip Cookies, and so far all the recipes I've tried have not gone over well as Gluten Free. However, I saw this recipe on Pinterest; The Aristocrafty Blog, and I thought, oh man, I think this recipe will be amazing! I tried it a few weeks ago with one kind of flour, they tasted great, the texture was horrible, my friend told me I could just call them wafers! Not good! So I decided to go at it again, and they looked Fabulous, and tasted Fabulous too!!! This is not my recipe, so I can totally brag, and not feel guilty!! My daughter and friend, who both hate Oatmeal Cookies both ate 3 or 4, and said WOW! I absolutely LOVED them, I could have eaten them all!! Try this recipe, you will love it, and never even know it is Gluten Free, Happy Baking, Natalie
-1 cup brown sugar
-1 cup granulated sugar
-2 large eggs
-2 tsp. pure vanilla
-1/2 tsp. baking powder
-2 tsp. baking soda
-1/2 tsp salt
-2 1/2 cups Pamela's Bread flour mix
-2 cups quick oats
-1 cup vanilla chips (Guittard are GF)
-1cup semi-sweet chocolate chips also (Guittard)
-Mix together the butter, sugar and brown sugar until creamy, then add vanilla, salt, baking soda and powder; mix well. Next add eggs, combine them, then add oatmeal and flour and combine tell all mixed, don't over mix. Then add the Chocolate chips and you are ready to bake.
- Preheat the oven to 350 degrees, make sure and spray your pans with Pam spray. Bake for 10 min..they are much fluffier at only 10 min, if you want a flatter cookie then cook them for 12, they are still really moist, I just like the way they look better at 10 min. Cool on the pan for just a minute, then remove to a towel or wire rack. These cookies stayed fresh for 5 days in a container. These really are FABULOUS!!

Gluten Free Blond Brownies

Ingredients:
-2/3 cup butter
-2 1/4 cups brown sugar
-3 eggs
-2 2/3 cups Pamela's Bread Flour
-2 1/2 tsp. baking powder
-1/4 tsp. salt
-1 cup semi-sweet chocolate chips
-1 cup chopped nuts (optional)
First- In a sauce pan, melt butter, then stir in brown sugar and mix together on low for about 2 min..then let it cool for 10-15 min, if you don't when you mix it together with the chocolate chips you will have CHOCOLATE BROWNIES :(
Second-after the cool down period, add eggs one at a time, mixing well after each one.
Third-Stir in flour, baking powder, salt, chocolate chips and nuts(if desired) and mix until well blended.
Bake at 350 degrees...for 35 min in a 9x13 inch glass pan(if metal cook less) spray with Pam baking spray. Spread it out evenly, the batter will be thick, make sure and check the very center with a tooth pick to ensure that it comes out clean. They will look a little under cooked until they are completely cooled. Then cut and enjoy.

My friend told me about this recipe, her mom always used to make for them when they were kids, this was one of her very favorite treats ever. So I took the challenge, to see if I could make a Gluten Free version taste just like her moms. I have to admit I was really nervous, her mom is an excellent cook, and Gwen is one of my very favorite people, so I didn't want to let her down!! Well I am happy to say, Gwen tried the brownies, and said they tasted just like her original, Gluten Full recipe!!!! YAHOOOOO! I was so HAPPY!! I have been given several more recipes by neighbors, and can't wait to try them too. Gluten Free Double Chocolate, Chocolate chip Cookies

Double Chocolate, Chocolate chip Cookies
If you love Chocolate, you better try these cookies! So far anyone who has tried these cookies, have absolutely loved them! There is no way to even tell they are Gluten Free, I dare someone to tell me they can tell the difference, try them and let me know what you think. Natalie
1- 1 cup butter softened
2- 1 1/2 cups granulated sugar
3- 2 eggs
4- 2 tsp pure vanilla extract
5- 2 cups Pamela's Bread Flour
6- 3/4 cup unsweetened cocoa( I have half dark/half regular)
7- 2 cups semisweet chocolate chips ( by the way Guittard makes their chocolate, in a GF and Peanut Free Facility)Yay!!!
Preheat the oven to 350 degrees- a lightly sprayed cookie sheet.
-In a large bowl or mixer, combine butter and sugar and mix until they are nice and fluffy, next add the cocoa and mix it well. Then add eggs, vanilla and flour mix until it is well blended. Add chocolate chips and mix slowly until combined.
- Roll the cookies into balls and bake for 8 to 10 min (I liked 8 minutes, it made them stay puffy) but even if you cook then for the full 10 they are still soft in the middle and chewy on the edges. Let them cool for a minute or two on a wire rack then, then take the cookies off the pan .
My kids, and the neighbor kids loved these cookies, which was definitely my goal. I'm not trying to re-invent the wheel, I just want to take recipes I use to be able to eat and make them FABULOUS for all of us Non Gluten eaters, and Gluten eaters alike! I want people to stop asking if it is GF, and start asking for the recipe!!
