Chewy Oatmeal Butterscotch Cookies, Gluten Free



Chewy Oatmeal Butterscotch Cookies


1 cup of butter(melted, not scalding)
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cups Pamela's Pancake mix
1 tsp. ground cinnamon
1/4 tsp. salt
3 cups oats
1 bag butterscotch chips(or how chippy you like)

1-Mix together butter, sugars and vanilla

2-In a separate bowl, combine flour cinnamon and salt, then gradually add to the creamed mixture. Add the 2 eggs and mix well. Stir in the butterscotch chips.
Chill in the Refrigerator for 1 hour.

3-Bake at 375 degrees for 10-11 min, do not over cook, they will not be brown on top like regular gluten filled cookies. Brown edges are good. Let them cool for 1 minute on the pan, before transferring them to wire racks.

Yield: 4 dozen
